It’s an experience that not only demonstrates the skill of the artisans behind the plate and the storytellers behind the grape; but a deeper and more rooted desire, to develop a fully sustainable dining experience.
An act that closes the loop, whilst opening up the senses in readiness for an evening of minimalism and creative play.
Meet proprietor and Head Chef of Wild Shropshire; James Sherwin.
James’ had often said to me – to really appreciate Wild Shropshire – is to be ‘at’ Wild Shropshire. So when the bi-annual bookings opened in the summer of 2022 – my wife and I quickly seized the opportunity to celebrate the ‘finale’ of my forty-second birthday. This conversation finds its ground in that immersive, humbling and unexpected autumnal experience.
Surprisingly, this isn’t a conversation about food.
It’s a conversation about music, culture and everything that influences the creative act. This is a conversation that reminds us to reflect on who we are, why we serve and what influences our way of being in the world?
This intimate exchange – a moment of reflection – highlights the immersive nature of honing our focus. It helps us understand why abundance can often subdue our senses. Because, when you revoke choice and you relinquish control, you find nuances in what’s presented.
Through essentialism and without distraction or ceremony – the art can reveal itself.
What you live is who you are.

An evening at Wild Shropshire is best defined by one moment. When the excitement of creation meets the excitement of receipt. When dining in complete synchronicity, you collectively anticipate what will land and how it will look. And that moment can either silence a room, or generate a flutter of animated energy.
